Just replace with as "should have", "should of" just sounds natural to us I guess.

Close proximity of the sounds when speaking. It's not exclusive to english speaker too.
They probably know the difference, just that since it's their mother tongue, they have more automatism than an ESL, which can lead to mistakes like this when not paying attention.
I tend to do that too when I speak a lot to online friend in English.
