San Francisco is kind of different
its got major downtown areas where yah, theres nothing bust streets like that with skyscrapers everywhere, but then you have places like the sunset or the Mission district which is completely residential

Numbered grids are easier to navigate.
European cities are designed according to terrain because back in the day adjusting terrain was much harder. american cities are much more recent so they could flatten areas and make straight grids everywhere.

Well, city grids tell you in which era they were build/planed. Cologne is a roman time city which expanded largerly in medival times. The inner core is structured, while the surrounding streets are quite chaotic.
The more recent cites have more space for transportation and industry. Thats what you see on many US cities.
