I've only ever been to a single Japanese restaurant that was actually run by Japanese people and even then it was staffed by Mexicans. It's always Vietnamese, Koreans, or Chinese for some reason. Thai people just open Thai restaurants.

Rationally, you would think so. But many people omit aspects that violate their ethnicity and religions, yet still resoundingly identify with them. Hypocritical but I don't think they believe it lessens them.
