I don't actually recall anyone like that.
We have for example Zawisza Czarny, who's like a prime example of a virtuos knight, he's been undefeated in tournaments, fought against Turks and Teutons, was a great diplomat and so on. But he's an actual historical character, not a legendary one, so I don't think we actually have one.
