What is your favourite italian dish? Mine is Spagetti ketchupo

Mine is spaghetti carbo, it's like carbonara but it's better, it's cream + mushrooms + bacon, we also drown it in emmental cheese (it's like a better version of parmesan)

Either a basic white rissoto with a good seasoning of pepper and parmesan, or spaghetti with olive oil garlic and chili flakes

While living in Verona I once had an Italian pizza with buffalo cheese and sunny side up egg at the center. It was glorious.

Exactly, when made correctly it's not chewy and "doughy", it's lighter in the stomach as well. It's all about how the cook prepared the pasta beforehand.

My grandmother makes an amazing gnocchi but restaurants and other people don't know how to make it decently. I have yet to a eat an actual italian gnocchi but I'm guessing it's about the same as my granma's.
