I've been to both countries. I was in Taipei for new years 2014 and was stunned to see the Taiwanese sit in perfectly ordered rows in the middle of the street as they waited to watch the fireworks show to start from Taipei 101.
No one prompted them organize themselves to sit in rows it just happened.

In my experience this is sort of true.
Taiwanese Identity has been forming around the idea of not being mainland Chinese. Sort of like Canadian identity formed around not being American.

Actually writing コ isn't very streamlined if you only wrote Chinese(and not Japanese), usually the other way is more "順手”. Practice is also probably a factor

Ah, so 鹿 wasn't simplified. Was somewhat expecting something like pic related, at least the マ aspect of it, with the inner radicals being simplified a bit like how 马 is.
Is it common for characters like 學 to be written as 学 when handwriting, or do people write out traditional form like how Japanese write out words like 長男 instead of 长男?

Some people mix simplified and traditional, whereas others write simplified entirely. Few people solely use traditional AFAIK. I have seen many people write pinyin instead when used in Singlish. Several companies(esp. construction companies) like to use print traditional characters(of their brand name) on their Hitachi/Caterpillar construction vehicles though.

"鹿“ iirc was not ever simplified, even in the second batch (both draft and revised draft which are abolished in their entirety).However '魔‘ was simplified in both scrapped drafts.
