Technically the Irish joined as an Irish speaking country, because English was already covered in the UK's application. Technically (but most likely only technically) with Brexit English will no longer be an official EU language. I doubt the EU will suddenly start using French though, because that would require actual effort, and if there's anything the EU hates it's putting effort into creating any semblance of an identity.
