On a serious note OP brought up a good point. I'm trying to reteach myself Spanish right now and on Memrise and Duolingo they give me the option of Mexican Spanish or Spanish Spanish. Plus if I go on youtube it could be any number of accents.

It's more complicated than that. In Latin American Spanish, Z and C (before I and E) are pronounced identically to S, a phenomenon called "seseo". In Spain, you have "distinción" instead, where Z and C(I/E) are pronounced /θ/ ("th" in "thin").

The stereotypical "lisp" where every C(I/E), S, and Z turns into /θ/ is called "ceceo", and is mostly limited to rural areas in Spain, as far as I'm aware.

On a related note, the pronunciation of S in different positions varies from dialect to dialect in general, beyond the "lisp" thing. In many dialects, it approaches /x~h/ (/x/ being the CH in "Bach") before a consonant.

Pick one dialect for now. Once you're fairly fluent, you can choose to adjust your vocabulary and accent, if you wish.

1. Yes; I speak both European and Brazilian Portuguese. European is my 'default'. (Of course, within those, there are individual, regional dialects, just like "American English" can sound different depending on what state the person speaking is from. Unless you plan on becoming a voice actor in a second language, it's probably not worth your time to learn that many different dialects.)
2. There are too many factors involved to give you an accurate estimate: your own innate aptitude (or lack thereof) for picking up on the differences and applying them to your own speech, how you study, etc. In general, when you're reading or listening to Spanish, try to be cognizant of the writers' and speakers' backgrounds, so you have an idea of the region their writing or speech is typical of.
