Should I go to USA or Canada? Are they both equally un-european, meaning my job won't be 9-5, but some huge 12 hours long shifts and crunch modes? Where can I get better money? Where it is easier to get into, considering I use French passport due to dual citizenship?

If you have a French passport Canada will obviously be easier to get into. If you want to live in a """european""" city then montreal will likely be your best bet. Canadians are typically much more welcoming of foreigners so you'll probably fit in better here. It's also much easier to get in here as a skilled worker than the states.
