Americans are almost entirely ignorant of Spanish culture, the rest of this post will just elaborate on that a little.
I don't think it has anything to do with who Mexicans are as people or anyone else that speaks Spanish. I think it has to do with how other people are expected to conform to Americans standards but the reverse isn't true. The only cultural connection the average American have with Spain or Mexico is from media, and within media Mexicans are used as cannon fodder for cheap comedy and cannon fodder for controversial news. while Spain is dwarfed by France, Germany, the UK, and Italy in public interest. The only aspect of any Spanish speaking culture the average American willingly participates in is food. Besides that, the only interaction ever forced on anyone here is simply learning about Spain or Mexico in school, keep in mind history is taught very poorly here. It's no wonder they said what they said
