Boerenkool, hutspot, pannekoeken, snert, all fine food. And the stealing ingredients part was just economically sensitive, since spice trade was extremely profitable and easy to monopolize. Besides, all countries "steal" food from cultures they come into contact with, that's just cultural exchange. Spaghetti, for example, was based on Chinese food. Also the spice trade didn't seem to affect traditional Dutch cuisine much, since that is mostly non-spicy food.

the only (authentic) ethnic restaurants in my small city (>25k, <50k people) are a few italian, a dozen mexican, a couple german, and one polish , and a few scattered dodgy-looking asian places.

all are good, but i wish i had opportunity to try other foods, like french, nordic, or south american
