No language intrinsically sounds better. Personally I find Chinese languages to be nice, especially Mandarin. Actually pretty much all languages are pleasant, maybe not initially but they grow on you.

Mandarin can be nice when spoken in a relaxing tone of voice, but Japanese is by far the most pleasant Asian language.

Turkic languages like Kazakh and Mongolian have grown on me because of their weird vowel sounds though.

Most of the languages you're probably thinking of (Vietnamese, Thai, and the various varieties of Chinese, to name a few) are all tonal languages. Japanese is not. Anecdotally speaking, many Westerners who dislike the sound of these languages take exception with the tones more than anything else.
