I am a Catalan, so I am aware that there are more than five possible vowels, and can actually distinguish between "y" and "i".

Just don't try making them understand this, it is useless. They even fail at properly speaking my language when they live and have children here, which is supposed to be close to Spanish (As both are Romance languages)

German Ü is supposed to oscillate between ʏ and y.
Apparently, both are also present in Norwegian and Swedish, but they tend to be more protruded ( ʏ̫ y̫ ), maybe that is why you hear it different.

It is kind of painful to listen at. It is like if they were constantly "devoicing" consonants. Maybe it is because in Catalan, my mother tongue, we have many stop consonants, obstruents, monosyllabic words, and maybe some "harsh" sounds, and I am used to that. It has some atypical characteristics for a Romance language. We don't add, for example, vowels at the end of words like in Spanish or Italian.
Interestingly, one of those characteristics is the final-obstruent devoicing. While shared with German, Dutch... It is not present in North-Germanic languages (including Danish), or only partially.

At any rate, Danish sounds stressful to me.

Danish puts the stress in me too.

In Swedish and Norwegian, you usually pronounce most letters in a word. The Danes, as you say, devoice consonants. It's possible to understand as a Swedish speaker, it's not impossible as some people think, but you pretty much have to change the way you expect words to sound.

Reading Danish is much easier.

How is the relationship between written Catalan and written Spanish? Easier/harder to understand than spoken?

Like it usually happens between Romance languages, I think that written forms are more intelligible, because (specially in Catalan) they reflect etymology besides pronounciation.

Still, a Spanish speaker would have a very hard time deciphering written Catalan when heavy grammar differences or non-Latin vocabulary appear (a Scandinavian would unironically have it easier).
Spanish "cuchillo" is Catalan "ganivet", originally a diminutive of "Ganif" or "ganivet", means "knife", cognate with Swedish kniv (Proto Germanic knibaz)

In Spanish you say "rato", we Catalans say "estona", which means "a while", an unespecific (not long) amount of time. Cognate with Swedish stund.

I could go on...

Of course, most of our vocabulary is of Latin origin, but as you can see, these "exceptions" are part of the core vocabulary, they are kind of essential, and very frequent in "every-day" language

Catalan is just less arabicised than Castillian, memes aside. It's probably closer to Latin, I'd say.

Portuguese/Galician also kept a lot more celtic influence from being further away from the Roman and Arab central points so we always had less influence from new things (much like now), which is why we sound slavic.
