According to the US census:
"White" refers to a person having origins in any of the original peoples of Europe, the Middle East or North Africa. It includes people who indicated their race(s) as "White" or reported entries such as Irish, German, Italian, Lebanese, Arab, Moroccan or Caucasian.
Additionally, people who reported Muslim (or a sect of Islam such as Shi'ite or Sunni), Jewish, Zoroastrian, or Caucasian as their "race" in the "Some other race" section, without noting a country of origin, are automatically tallied as White.

Why do Europeans hate to acknowledge that we are white? Is it because admitting we are white would lead them to the realization that the USA was created by European colonialism, and our culture is derived from Europe? Are they afraid that when they look at America, they see a little bit of themselves in it?

The only reason they didn't make a MENA category is so Jews don't have to choose between MENA and European.
If they pick MENA, they lose whiteness points but if they pick MENA they lose credibility for being Israelities.
