Don't go there for the pizza unless you like thin crust, and even then it's a "meh" thin crust and pretty expensive. Go there for the pasta, but avoid the meatballs and bolognaise. Sausage arribiatta penne is pretty fucking good. The salads are also decent but are literally identical to the same you can but at Kelseys and Milestones. You can't really fuck up salad.

I haven't been to ESM since I was fourteen, and I'm twenty-eight so basically i have no memory of the food there. I don't think I even ate the pasta. My guess would be "probably." based on kitchen economics alone, but they could easily be different somehow.

To specify how it is made, we pre-cook all the pasta in the morning to al-dente, so it doesn't over-soften when we re-cook it later. Then we strain and cool the noodles, portion them into daybags, and store them in plastic cambros (foodsafe tubs of various sizes) in the walk-in fridge until they are needed to stock the pasta station. At the pasta station noodles are re-heated in a special pasta heater which is several metal-mesh-baskets with insulated handled suspended in near-boiling water. Cold al-dente noodles can be reheated in this in about a minute or two. Meanwhile the sauce and other ingredients can be quick-cooked in a wok before the noodles are added and stirred-in. The ingredients for each dish are also portioned into day-bags. This way somebody on pasta station can make 4 pastas at once, each only taking about 2 to 5 minutes depending on how work-intensive they are and if they need to be baked in the oven or not.

It's not good in the way pasta from an old italian mama's kitchen would be but I challenge that old italian mama to cook her family recipie in 3 minutes a pop for 100 hungry people at once. Restaurants need to consider efficiency, especially with the rising costs of food these days compared to stagnating wages. If we raise meal costs too high people will just stop going out.
