Most offal has sort of been off the menu of most people here since the 1950's. Whenever I kill a steer or sheep I will use the tripe, kidneys, heart, tongue, liver etc all dressed, cleaned and then I just sort of sneak it into various things like stews, sausages and casseroles as a 'mystery meat product' and most people don't notice.
I have tried to use smoked tripe + green pea soup on best soviet wife thinking she'd like to try some, that went down very badly :(
