The absolute top comfiest is classified, but I've always liked Braga and Coimbra.

The whole Douro margins are also pretty magical, and have been recognised as the best road to drive in, where you can see landscape like this throughout.
It depends on your personal preferences. I'd say Mazury and Warmia regions known for many lakes and forests.
