We have really delicious cold smoked beef's tongue around here. It's cheap, tasty and keeps long.
We eat tongue, brain, tripe, testicles, etc. in tacos and soups here in Mex.

Hearts you eat when you prepare something yourself, but i've never seen it offered on its own (?).
Rabbit and chicken heart you often get from cooking the whole thing, is good but small.
Liver is the best.
Put it in a frying pan and add vinegar.

We do have a lot of these dishes but tbqh I've never tried any, I'm very strict about eating only skeletal msucle even in Pozole (maciza) the exceptions being liver paté and wahtever it's "hidden" in charcuterie like sausage and chorizo. I'm a huge fan of quality olive loaf.
