We have really delicious cold smoked beef's tongue around here. It's cheap, tasty and keeps long.

Yep we have quite a bit

Kidneys, usually veal/beef are quite fancy and always in restaurants. With many different preparations.

Guts are a Normandy specialty, but i don't like them t b h

Gizzards too, duck gizzard is good in salad

Beef tongue is also quite common everywhere, not only here i think

Hearts you eat when you prepare something yourself, but i've never seen it offered on its own (?).
Rabbit and chicken heart you often get from cooking the whole thing, is good but small.

Liver is the best.
Put it in a frying pan and add vinegar.

Because bovine liver has this weird consistency. Meanwhile rabbit liver turns into this paste-y kind of meat which is delicious.

We do have a lot of these dishes but tbqh I've never tried any, I'm very strict about eating only skeletal msucle even in Pozole (maciza) the exceptions being liver paté and wahtever it's "hidden" in charcuterie like sausage and chorizo. I'm a huge fan of quality olive loaf.
