you make courgettes mousaka if youre up to it
you take the cougettes and slice them in half long ways. you use a spoon to get the seeds and the mushy part out. or use a knife. you salt them heavily and start cutting up the other veg. onions, carrots, tomatoes and garlic. you can use pepper too. when youre half way done withcutting the veg you rinse the courgettes and re-salt them. you cut the veg into small cubes - 1cm by 1cm is the size you aim for. if lazy large cubes is fine too. when youre done cutting, you put the onions and the carrots in a tenjera with a bit of oil on the bottom. after they are soft you add the rice. after 2-3 min you add the tomato, the pepper and the garlic. after a bit (when everything is mushy, and the rice is sort of cooked) you get it off the stove and you put in a tava where all the courgettes are and you fill the courgettes with it. whatever is left you just place between them. you put that shit in the oven and cook it. after a while you add a bit of youghurt with some eggs on top of it. as far as ive tried 3 courgettes go well with half a cup of youghurt and 2 eggs. after the crust is cooked on top serve and eat. the courgettes should be fully cooked but still a bit crunchy and should feel "fresh" and the rice shouldnt burst and be too oily.
