I'd think Latin but they do speak some German

In my experience (lived there for 3 years), they are very emotional, like other Latin people; however, their romanesque aspects are tempered by a deep-seated Germanic autism.

the more you go to the north-east, the more you can feel the germanic influence
the more you go to the south-east, the more you can see the bad latin traits showing, espcially the love for obnoxious, vulgar and corrupted politics
Bretons have their special snowflake celtic-flavored latinism, and the north has a tiny bit of flemmish-flavoured latinism
the rest of France is mostly a very own gallic brand of latinism
