I watched the kill la kill making of, I recommend it. There's also the Paprika making of in a different style (focus more on the overall directing of the anime from director Satoshi kon and the adaptation aspect of it rather than the groundwork). Both are easy to get from youtube

Tamako Market, Gurren Lagann, Chunibyo, A Silent Voice have making ofs in their Blu Ray extras

There's one for that Japan Anima(tor)'s Exhibition and stars(?) Hideaki Anno. I have it but haven't seen it because my toaster is extra toasty.
