It's that while drawing you've become used to looking at it from one perspective, and then when you flip it, you suddenly see it with new eyes.

Same reason you think you look weird in photos and your voice sounds weird recorded. It's because you're used to seeing yourself in the mirror, and hearing yourself from inside your own noggin. You don't actually look or sound weird, it's just that tiny difference that's so jarring to your dumb frontal lobe.
Same with flipping drawings. People think they're seeing "mistakes" when they flip their image (which is entirely possible) but they could just be weirded out from the flip. Take it with a grain of salt.
