3-point wouldn't be good for full, large compositions like OP posted. In this way, the vertical elements in the painting like the pillars would be parallel to the picture frame and whatever vertical elements outside of the picture frame. 3-point perspective isn't so hard on a small scale. Doing a large and full painting, for which you have to account for the spectator in front of it, in 2-point is still more challenging.

People go balls deep into learning perspective because the challenge of perspective isn't setting up the vanishing points, but to be able to think about each and every object in a scene 3 dimensionally. Like the painting you posted, the challenge obviously isn't drawing those simple geometric buildings in perspective, but to draw each figure on the proper ground plane and be able to foreshorten and place them in 3D space even when they don't follow the same vanishing points as the buildings.

The same things you learn when you study perspective superficially. Mastery of perspective isn't learning super secret and complicated techniques, but rather getting really confident at all the simple concepts that are easy to understand in a vacuum, but challenging to apply in practice.
It's the difference between some noobie doing a perfectly proper perspective grid and then carefully drawing some blocky houses that all align perfectly to the same vanishing points vs a veteran artist doing some dynamic and playful freehand scene with figures, objects and architecture foreshortening all over the place towards multiple eyeballed vanishing points..

It's a simple composition tool. Anything higher than 2 vanishing points over complicates a composition. We have the technology to more easy use perspective in a less rigid way, so go for it if you desire it.
