I've been doing commissions for a while now. As far as I know there is no way to hide your personal data even with a business account. Filling out a field with wrong information like >>2924610 might get you into trouble. Nobody fucking cares about your real name, you don't run for president. You have to mention it anyway when you do your taxes. Just make sure you can trust your client (has he commissioned artists in the past?)

You can buy dragon dildos with paypal. Most artist get into trouble because they don't know how to use paypal or try to abuse chargeback for no reason. They try to dodge fees by donating the money or forget to mention that the money was for a service. By default paypal assumes you will send a physical item and it wants a tracking number after the payment was done.

Always use invoices. Don't let them send you money.

I started being happy the moment I stopped giving a fuck about everyone knowing I draw the wildest fetish porn for money.
