You should be able to recognize the important elements in your image, even when the detail is lost.

Art school grad here. Squint. It sounds too simple, but it's the only way. Practice with the amount of squint. The firmer you squint, the more general sense of the subject you will see... less of a squint will allow you to notice more details.
Squint while looking at the subject, then also at your drawing. The goal is to get the large shapes blocked in, then search and refine.
If you learn how to do this well enough, it wont matter what medium you are using, though vine charcoal is the fastest.
Also, do master coplies of artists who worked in value, like Seurat and John SInger Seargent.
remember that value is relative- not every piece needs the darkest darks or the most range
