If the US didn't enter WW1, and Italy joined the Central Powers,
Would Germany be able to capture Paris?

Germany failed to close the deal several times - even without Italy. And Italy's primary motivation was pure egotism. They made their point clear when they proclaimed neutrality early on instead of making excuses for not living up to the treaty. They even made it clear they wanted Austrohungarian concessions for fighting on their side during their bargaining. Imagine that; having an "ally" demand parts of your nation for fighting on your side. They had clear objectives for joining the war and the Entente offered the better deal. The only way they would join the CP would be when the CP would be already victorious in all but name, but as I mentioned earlier; Germany failed to capitalize on their own momentum.
And America joining the war was the last nail in the coffin by that point. A foregone conclusion but it helped end the war more quickly (thankfully)
We actually had this thread a few days ago, and I already answered you
