You're going to have to narrow it down. Byzantium lasted longer than the Roman Empire, the early Byzantine army (basically the same as the late Roman army) is almost totally unrecognizable as the highly mobile themata, and kept evolving all the way up to 1453.
Maybe check out the wiki page for a quick rundown and work your way out from there?

You can start with the Osprey Men at Arms series on Byzantium #247 Romano-Byzantine Armies 4th-9th Centuries and #287 Byzantine Armies 1118-1461. Both have "Further Reading" sections chock full o'stuff.

Read Osprey books. Informative and they have great visuals. You can downlaod them as PDFs or buy them on Amazon. I own a shitload of them.
