Being taller means longer strides for more energy efficient movement. We probably won't get much thinner as a species unless our heads do the same thing, humans already have a relatively huge problem giving natural birth due to our thinness.

Probably nutrition and genetics. Celts, Germans, and Scythians were noted for their great height because they had an animal protein rich diet and Northern Europeans tend to be quite tall compared to Southern Europeans.
