Why does Byzantine get so little attention?
I haven't seen one movie set in the this eastern capital of Rome...
Even Assassin's Creed games weren't set in this enormously relevant and interesting place

This. People here equate 'Byzantine' with convoluted bureaucracy and courtly intrigue
not to mention the ERE never really got along with Western European polities (hence you had a competing Holy Roman Empire that was in fact more convoluted and less Roman)
some things about ERE do work against its favour as far as attention in the West goes

and unfortunately, that came during the Middle Ages, which seem to get completely ignored (apart from the Crusades and the plague) in the modern historical consciousness
