Why does every white American automatically say they have German and Irish in them even when they don't? How does a lie like this even get started?

look up the most common American surnames, they're Anglo, Mexican and some Irish
It's because in reality white Americans are primarily British descent but everything British was taboo in America for obvious reasons
That and special snowflake syndrome in wanting to seem different or special led to Americans plagiarising their family history (1 Irish great-grandparent, 7 British great-grandparents but identifying as Irish American)

People are more likely to identify with their German/Irish etc heritage because it's more recent, and thus more known. These ancestors are known but their primarily English ancestors have probably been there longer and thus there aren't really records and they don't know for sure where those ancestors came from.
