The concept behind the cannon is pretty fucking basic.

Imagine if a rifle's barrel had additional mini explosions going off directly behind the bullet as it travels down the barrel, further accelerating the bullet to ridiculous speeds and giving it crazy range

Just like with the V-2, the payload being deliver is pathetically small in proportion to the resources being expended to deliver that payload. Only with nukes would this sort of thing be practical, because then you'd have a payload that is powerful enough to justify the delivery system. Notice that long-range missiles weren't considered of much importance until the advent of nuclear warheads.

I'm pretty sure they'd need a ridiculous number of those cannons to do any kind of serious damage.

They did not have enough fuel for the vehicles they actually built. The gas issue was the hard limit on the effectiveness of the German war machine, and when you realize that it becomes clear why they had so many weird side projects. If they had built another 5 thousand tanks by cancelling all that shit, they would have simply rusted in a warehouse.
