Why 13th/14th century Artists were obsessed about drawing knights

Some artist may have done it to represent a royal house he didn't like or maybe he did it just because snails were the most pathetic creature he could think of and thus thought it was funny to draw a knight fighting one. Either way, other artists started doing it themselves just because he did it and the rest is history.

Medieval people were enthused by drawing parallels between human societies and nature, so a snail may represent a knight in nature, since it's "armoured."
