Mizrahim have straight, wavy and curly hair. Some even coily just as Ashkenazi who for the most part are just as varied with a few having very coily hair.

Ashkenazi interbred with the locals just enough so they didn't appear alien and could conduct trade without arousing suspicion. They're essentially modern-day Samaritans, mongrel half-breeds with enough European admixture to increase their IQ.

As far as assimilation goes the idea of the melting pot isn't radically different from other attempts at assimilation throughout history. Of course originally the melting pot only included Europeans. Adding non-Europeans into the mix is another story entirely and the whole thing falls apart.
