Mostly it gets destroyed with time. Ancient peoples didn't like graffiti anymore than we like graffiti today. If you're lucky and the structure got buried or built over with age you can find stuff still.

2000 years from now they'll be digging out LA graffiti from the preserving ash of Yellowstone

Good question. I'm not aware of any actual percentages, but I've heard that literacy levels in Rome were probably higher than they were during medieval times. Of course, literacy isn't a binary attribute, which complicates comparisons further.

Just because they could carve out a few poorly phrased shitposts on the latrine wall doesn't mean they were "literate". That said, Pompeii was a resort town for the rich & famous, a sort of coastal retreat for the hoity-toity of Rome. So literacy was probably higher there than you'd expect in say, rural Italia. The potential for sampling bias means you find a lot of quoted figures depending on the professor asked, anywhere from 5-30% from my experience. Many better off households had professional scribes (slaves) to write formally for them, which complicates matters further.
