How does one formally dissolve a government? Are legal documents drafted? How do I get into this business?

Most governments tend to base their legislation on the principle that they can't simply be dissolved. There are no legal mechanisms in place for such a procedure, and as a result if you want to do it it has to be forcefully.
The most basic step one can take in that direction, for countries like the US, at least, is the voiding of a Constitution and the drafting of a new one. If what you actually want really is to dissolve one civil system of government and substitute it for another in the most formal way possible, you start by doing that.
