It was still called the Roman Empire during that time period. It wasn't until after it all fell apart again did Byzantine start being used.

You know what I mean you autist
Byzantium by John Julius Norwich, it's a very good, detailed, and easy to read, chronicle of the empire from Constantine I to Constantine XI in three volumes. There's an abridged version as well, but don't bother with it, the original versions are huge but will hook you in like a fiction novel.
I hope you have a Kindle though, otherwise, good luck finding physicial copies.
Start with Treadgold's A History of the Byzantine State and Society.
Or if you want a much less heavy work that you'll get through very fast and get the basics, maybe Peter Sarris - Byzantium: A Very Short Introduction. I haven't read it but I know of some of his other work.
