Africa Addio (1966)
The Great War from the sixties and The First World War from 200something are about WW1 and both are absolutely fantastic. Much better than World at War to be honest.

Hearts and Minds is an essential contemporary documentary made about the Vietnam War. Some pretty powerful footage and pretty significant interviews with some of the key players involved in the conflict.
The Fog of War is also good.
Russian Ark is very good.

The last one is academically sourced. Stolypin's assassination is one of the most intriguing events in history. He would have given the peasants of Russia the reforms they wanted without the bloodshed of the Bolsheviks.

Fog of War is where it's at. It really gets into McNamara's head and showcases that he was really the man driving the Vietnam War even as he tries to convince himself that he isn't responsible.
It's also a great look at the Cold War in general, particularly the Cuban Missile Crisis.
