It's simple - nobody cares about Byzantium. Outside of Turkey and the Balkans most people don't even know such a thing existed. Hollywood is in the business of making money, not wet fantasies of history nerds.

Bulgaria made some movies about its history, some of them revolving around the Byzantines, obviously. Most are shit tho.
One of them was 5+ hours epic about the establishment of Danube Bulgaria. It's about a Byzantine ambassador's son who is given to the Bulgarian khan and spend years there and later takes part in the war against the Byzantines.
There is an English version of it, but it's only hour and a half.
