Why do peiple regard Belisarius as one of the greatest Generals. Sure he conquered back Italy, held off the Persians ect. but what great manoeuvres did he pull off? What great tactics did he employ?

Belisarius pulled off some stunning victories against forces over twice his size, usually by creating defensive barriers meant to divide his enemies into smaller subgroups and fight them one at a time to mitigate their numerical advantage.
the battle of Darra is definitely one you'll want to read up on, where the Byzantines under Belisarius defeated at 50,000 strong Persian force with a defense Garrison of 25,000.
The one he's most famous for is the Siege of Rome from 537-538, where an Ostrogothic force of 45,000 was held off by 5,000 Byzantines under his command for a year before reinforcements arrived.
Does /his/ have any good books on his notary campaigns to recommend? My knowledge on the subject currently comes from general Byzantine history stuff.

The only real primary source work out there is Procopius, which is still held in high regard to this day.
