Ottomans tolerated Christians as they needed their literacy to make up the state bureaucracy, and most other white collar positions, as well as to have a group to play the Muslim population against so that they didn't rebel.

With the rise of Turkish nationalism after ww1 and the fall of the Ottoman empire this policy was specifically rejected and all non Turks were to be purged from what would now be called Turkey.

After Greece was defeated in 1922 in Asia minor and Turkey became a state, Venizelos and Ataturk signed the Lozanne treaty, which stabilized the borders in Evros river and exchanged Turkish in Greece with Greeks in Turkey. They made it like this so that there a war would not erupt every time people from each side locally chimp out against the others.

The difference is that it was not territory they expected to keep. Turks wanted anatolia above all, the greeks wanted the anatolian coast. The turks here met their strategic goals to a greater degree than the greeks, insofar as the turks got all of anatolia while the greeks got only territory that was already going to be theirs.

We're speaking of two different ideas of "winning", then. I'm taking the clausewitzian definition of such, in which winning is meeting more of your strategic goals than your enemy and upsetting his own. You can win in such terms and still be pretty fucked, but it's still a singular win.

As battles go, the Greek army was defeated by the Neo-Turks.
On a grande scale, bear in mind that this was the closure of the Balkan wars. Greece got the islands and North Greece, Turkey became a modern nation, populations were exchanged and life went on.
It is not as if Smyrna was a fully Greek area. Turks reclaimed it and final borders were stabilized.

Yeah, because the turks ethnically cleansed it. I'm not putting blame anywhere or anything, ethnic cleansing had been the order of the day where the balkans is concerned for quite some time.

This can't be stressed enough. Much like Croats, Serbs, and Bosnians are the same ethnicity but became divided by religious affiliation. The Ottoman conquest of Anatolia and Constantinople/Istanbul was only really at the top. The genetics of all but the top leadership remained the same. the people just gradually converted to Islam. Essentially like how being a Catholic in Central Yugoslavia makes you a Croat or being a Orthodox makes you a Serb, Being Christian made you a "Greek" and being Muslim made you a "Turk". The Greek population didn't vanish into thin air in 1453, they just changed religions.
