I remember somebody saying that castle walls during the Medieval ages were usually covered in paint, unlike the way they look now or how they're portrayed in films.
Were they simply coated in paint, or did people also paint art on them as well? Post pictures if you have any.

I don't see why not. People were really into colorful shit back in the middle ages.
They were painted on the inside most of the time. Now you could have some nobles having their keep partially painted and with colored roof tiles.
On the other hand, cathedrals and basilicas, as well as some churches, used to be painted or covered in lime based plaster
