Generally there are a couple reasons:
In defensive wars, you'd want to fight for obvious reasons.
In a feudal type war, you were either being paid by your lord or forced to fight by nobility.
Many many throughout history soldiers were mercenaries, being paid by cash, land, looting rights, status, or some combination thereof.
And finally, people can be just plain too spooked to work in their self interest.

Because you won't most likely die terribly. Take WW2, for instance. You had about 24 million military casualties between all the combatants, and that includes wounded; they're not all dead. That's a lot, to be sure, but there were well over 100 million troops mobilized.
Most people going to war think that the dying or horrible consequences will happen to someone else. They're usually right.
