WW2 era roles around. Germany conquers France. Gotcha. My question is how did the Germans control the massive overseas French Empire? Its not like Frenchmen living in those lands had Germany right next door? Did the colonies go on as business is usual?

So only France was conquered, and the colonies had no ties to Vichy France or the occupied zone?
They didn't. The Resistance fleed there, so the Germans and itlians invaded Algeria and Morocco.
They couldn't conquer the Southern territories in Africa though.
The Northern captured ones fell after Operation Torch.
French Indochina fell to Japan.

Vichy France was still the official French state (just like US occupied Post-WW2 Japan was still the official Japanese state) so many colonies decided to remain loyal toit

By and large, they didn't. It was really only the stuff in Northwest Africa that was under Vichy control, and even then not for that long. But Equatorian Africa and their pacific possessions went Free French from almost day 1, the Americans took "protective custody" over a lot of their carribean holdings, the Japanese overran what's now Vietnam and had some plans to go after Madagascar, and the British overran Dakar and Syria.
