Traditional Chinese/Mandarin, aka the stuff they use in Taiwan. In mainland China they used simplified Chinese scripts.

Technically you'd need to learn Old or Middle Chinese which is vastly different from Standard Mandarin.

Or you can just learn Mandarin and read the modern texts. Because most of the scholarly work is done in China, you're better off learning simplified Chinese characters.
