Your question was why do different religions have angels as guiding stars.
Three of the four religions you provided come from the same traditions and thus have similar beings in their stories. Jews, Christians, and Muslims share the same mythos. Itself coming from several other cultures present in mesopotamia like the Zoroasterians.
Outside of those however 'angels' are quite different. Nike is nowhere near comparable to Abrahamic angels. Nor are the Valkyries of Norse myth. Or the winged serpents of mesoamerica.
So to answer your question, they don't. The ones that are similar share their traditions
