"Maple is the Staple: Canada's role in World History" by Jay Krump is fantastic
I read "Marching as to war" and was pretty satisfied with it. There are two volumes. One covers Canada The Boers War to the Korean War, and the other covers pre-confederation up to the beginning of the Boers War.
I would read "The Regenerators" by George Ramsay was also really amazing. Lots about Victorian Canada's obsession with social control.

It's province specific but British Columbia: A History by Margaret Ormsby was pretty informative and well written. It's also got some delightfully dated mannerisms in it, since it was written in the late 50s.
