How come it was largely only Germanic countries that embraced

Latvia and Estona too were quick to adopt the reformation.
A reason that the Germanic factions were more likely to adopt Protestantism was that they had lesser influence over the papacy compared to nations like Austria, France and Spain and only were sucked dry by its greedy monks and clerics. Austria, also a Germanic faction, stayed Catholic as they had more direct influence over it.
No idea why the Poles or Irishmen did stay loyal to the Catholic Church considering how often they got fucked in the ass by it,.

To answer your question OP, it's entirely for secular reasons. The easiest way for the numerous princes to undermine the Emperor's authority was Lutheranism. As for Scandinavia and the Baltic it was an mix of expatrioted Lutherans from hostile regions, geographical distance from Rome, undermining secular authority of the Papacy and therefore elevating their own Secular authority, and the spread of ideas across the Baltic and Scandinavia being closely related to trade. Riga was also populated entirely by Germans so it converted fast and disseminated ideas as well.

Poles have very successful reformation movement and reformed Christianity was very popular through nobility and burgers. They even form confederacy that protect freedom of religion.
But then Deluge happen.
Orthodox uprising, Muscovite(Orthodox) invasion and
SWEDEN invasion.
Swedish king was initially asked by some nobility to take polish throne but he fuck up as his army start plundering country.
In response there was gigantic catholic peasants and nobility rebellion who throw them out of country and then clean Poland from protestants who side with Swedes(somebody must take the blame).
After that Catholicism=Poland
There were other wars after but it was turning point. The other thing is when Poland get divided by Prussia, Russia and Austria, Russia oppress not Orthodox Slavic people and Prussia and later Germany oppress Catholics and Poles.
So Polish Catholicism is reaction to foreign invasion/aggression/oppression.
