It has nothing to do with western adoration. They do it because large eyes make characters look cute and it's easier to animate emotions with larger eyes. Western animators give their characters large eyes with respect to their heads all the time. When an anime has a more realistic art style, the eyes are nowhere near as large as in moe shows. Pic related shows how foreigners are usually depicted in anime in comparison.
