>Do I understand the history of Yiddish correctly?
Nope. There are actually conflicting theories on the origin of Yiddish.
1) German Jews speak German -> persecutions start around the time of People's Crusade -> Jews form tightly knit community with little contact with outsiders -> they language slowly diverge from German -> they move eastward and encounter their Slavic-speaking (Knaanic) brethren -> they assimilate the Knaanic Jews but not before adopting lots of their language -> Yiddish as we know it
2) Jews live in West Slavic lands and speak Knaanic, a West Slavic language -> masses of German Jews escape persecution by moving into Poland and Bohema -> they adapt Knaanic language, but not before adding lots of Germanic loanwords -> even more Jews escape -> even more loanwords -> eventually this cause a total replacements of Slavic words with Germanic, while retaining Slavic syntax and phonology -> Yiddish as we know it
