When exactly did European armies begin to stop using single shot rifles in favor of bolt action cartridge based rifles? These probably aren't the proper terms, though i know little about firearms.

In the 1880's mostly. Before that there were bolt-action single shot rifle (Chassepot, Needle gun), and some repeating rifles of somehow low power (Spencer, Vetterli). The new bolt action rifles were hot shit because of both the repeating action and smokeless powder, starting both in 1886 with the French Lebel rifle.
